This is an Eastern twist on rocky road with ginger, rose and pistachio flavours. It replaces marshmallows (eye-wateringly expensive if you want vegetarian ones) with Turkish Delight.
Melt:
350g dark dairy free chocolate
175g dairy free margarine
4 tablespoons golden syrup
Then mix in:
200g vegan ginger biscuits, crushed into small pieces (check they’re dairy & egg free – most brands are)
100g pistachios, chopped
200g dried cranberries
100g rose-flavoured Turkish Delight, chopped into small pieces
dried organic rose petals to decorate (optional)
Spread into a brownie tin lined with baking parchment and chill for a couple of hours. Cut into squares and enjoy!
